day 2 of daniel

Oh my.

Day 1 was easy breezy..

But today was Day 2.

And before I even cracked my eyelids, my head reminded me that it has been well over 24 hours since I had consumed any form of caffeine.

By 2:00, despite my ongoing headache, I could barely stay awake.

Sleep. Must sleep.

But sleep was not going to come.

I had to make food, you see.

Food. To eat.

Something – besides raw fruit and vegetables – was calling me, nay, begging me, to eat it. But I’m on the Daniel Fast and well, that limits my options.

So I did something I’ve never done before.

I went to the grocery store, and I bought some dates.

And I made this.

Date Honey.

What the heck is Date Honey, you might be asking.

And I’d say, that’s a great question. A question that I did not know the answer to until this afternoon.

Date Honey is made out of dates. And water. And cinnamon.

And goes on things like this.

Baked Oatmeal.

Another thing I didn’t know existed before this afternoon.

Besides lots and lots of advil, I can’t wait to see what tomorrow brings.

    So was it good? I love oatmeal but have never had it baked. And what the heck happened to your mini serving spatula? It looks all bent. I pray your headache goes away soon.

    ~YUM~ I made sweet potato fries (baked; tossed in EVOO) and called it dinner….~YUM~

    Might have to try the baked oatmeal for breakfast…the kids will love it!

    oh Stefanie–I know you can do this! And even more, I KNOW that HE is going to show Himself to you in amazing ways. I KNOW IT, because HE is so faithful when we SEEK HIM MORE!

    Excedrin have caffine in them so they might take away that lack of caffine headache;

    Oh Steph – hang in there kid – it’s doable!! And – after the 21 days – maybe just consider not going back to the caffine? You’ll feel better if you don’t!

    When I read the post title, I thought you have adopted another child named Daniel.

    Excedrin is great for headaches, but I believe it has caffeine in it.

    hey stefanie!
    just wanted to share some things we’ve eaten on the fast
    baked tostadas with beans (take a can of plain pinto beans, season them and cook them in the crockpot for hours, then put them in the food processor), lettuce, tomato and homemade salsa.

    cut baking potatoes into long quarters. toss with olive oil and your fav seasoning. bake. we had this with steamed broccoli and a salad last night and it was very filling.

    brown rice and black beans tossed together with matchstick carrots. eat it hot or cold the next day. drop a spoonful or two on a salad and it’s like a burrito bowl. put some in a whole wheat tortilla. use veg broth instead of water for more flavor with the rice. mix with a spoonful of salsa or some allowed vinegar dressing.

    tonight we’re have soup with potato chunks, barley, squash, and carrots and onion in a veg broth.

    for all meals, i have just added in a meat for the children.

    a spoonful of verde salsa or green enchilada sauce always makes things more flavorful.

    stuffed green or red peppers filled with brown rice, corn, diced onion, cumin and topped with green enchilada sauce.

    all good!

    of course read labels to be sure it’s all ok.

    oh and a good smoothie: soy milk, bananas, blueberries, fresh spinach and flax seed. (heavy on the fruit, not spinach and flax! :). ) is good.

        And I forgot to add that I am not one who excells at or enjoys cooking! :). So all this is easy! The soup last night was really good and the crockpot did all the work! And the grocery store made the rotisserie chicken that went in the kids’ bowls! 🙂
